  1. You need of beets (beetroot).
  2. You need of sweet potatoes.
  3. Prepare of sweet peppers of varying colour.
  4. Prepare of sprigs parsley.
  5. It’s of carrots.
  6. Prepare of kale.
  7. Prepare of salt.
  8. Prepare of ground black pepper.
  9. You need of sweet corn (i used Green giant).
  10. You need of cream style corn.
  11. You need of evaporated milk.
  12. It’s of soft table margarine/butter (low fat).
  13. Prepare of crumbled feta cheese.
  14. It’s of grated cheddar cheese.

Corn pie a la carte step by step

  1. Bring sweet potatoes and beets to a boil..
  2. Slice sweet peppers lengthways. Finely chop parsley..
  3. Grate carrots and put aside in a bowl..
  4. Cut beets into squares of medium to small sizes but not large. Crush sweet potatoes and place both in a large bowl..
  5. Chop up kale as finely as you can. Ensure not to add the stalk..
  6. Mix all dry ingredients in a bowl adding the salt and black pepper to taste..
  7. Add sweet corn and cream style corn to bowl and mix..
  8. In greased dish add approximately half of mixture. Then add a layer of cheddar cheese and add all of the feta cheese..
  9. Add remainder of mixture and layer top with cheddar cheese. Bake at 190°C for 30-45minutes. Enjoy! :).
